2 medium tomatoes, seeded and diced
3/4 C cooked corn (fresh or frozen)
1 medium onion, diced
1 jalapeno pepper, seeded and diced (or leave the seeds for hotter salsa)
1/2 cup chopped fresh cilantro
juice of 1 lime
1 Tbsp salt
Combine ingredients in a bowl. Refrigerate, covered, 1-2 hours. Enjoy!
