when eggplant is prepared properly it is quite good
Baba Ghanoush. Halve eggplant and grill or roast then cool. Scoop out innards and food process with several cloves of garlic a generous dollop of tahini paste(ground sesame) and a bit of lemon juice and salt to taste. Chill.
