Jalapeno Pepper. Recipe in first comment.

#1: Brian Bellis (mootpoint) on Apr 2, 2011 [SPOILER]

Char jalapeno skin directly on stove, right in the fire using tongs. Allow to cool then rinse blackened skin off under running water. Cut off stem and butterfly the pepper and remove seeds (unless you need extra heat in a recipe) Apply butterflied pepper directly to burger or grind into salsa. WARNING: Do not touch eyes nose or mouth after handling peppers. Wash your hands really well or wear gloves.

Don't forget about stuffing with cream cheese and then battering and frying.

I've never made poppers. Do you roast them first and remove the skins? What about the seeds? What is your batter recipe?
#17: Aldege Cholette (aldege) on Apr 4, 2011
Niki and i don't batter them,we stuff some with cream cheese and others with cheddar, stand them up in a ball in tin foil and put them on the shelf of the barbecue, son magnifique mes amie.We do habaneros like this too, killer hot.

I just made some chili rellenos and tried out the easiest batter recipe I've ever seen. Separate three eggs, beat whites to stiff peaks, blend yolks until creamy and fold them into the whites. Worked great. Another similar recipe I have seen a few places adds a tablespoon of flour per egg used, but haven't tried that yet to see what the difference is.
