Dunno how much it helps, but a learned discussion can be found here: http://www.bartleby.com/68/43/5243.html

In American English, at least, a saloon is mostly where cowboys go for a drink and a shoot-out. A salon is a gathering place with more positive associations, more a place for sophisticated conversation than a place for drinking. Since "salon" has more positive connotations than "saloon", "salon" is the one that gets attached to all sorts of other things, including "beauty salons" for women (but not for men - men go to barbershops), and "grooming salons" for dogs.

I've never heard of a "hairdressing saloon". Any online dictionary that comes up with that should not be trusted with the translation of international treaties.
