I hadn't realized how regional sugar maple trees are, or that the local Native Americans used to spend the entire month of March heating stones in a fire, then using a deer antler to carry the hot stones over to a hollowed-out tree full of maple sap, and putting them into the tree to boil down the sap, then using the deer antler to lift the cooled stones out of the sap and bring them back to the fire to heat up again. Over and over again, all month long. Wow!

It takes 40 gallons of sap to make one gallon of syrup.
The best conditions are a very cold January (making more sap) and a warming February into March. Then the sap runs freely.
The syrup produced earlier in the season is lighter in color, and not as sweet as the darker ones later. There are 5 grades of color.
