If you watch all the SAW movies in order, from about the third one to the end, it starts getting interesting as it turns out that the stories and characters all weave together.

But, you either gotta be able to handle some serious gore, or like me, recognize that the gore is so over the top that it is almost comedic.

What I look for most in gore type horror is whether they can kill someone in a unique and creative way that I've not only never seen, but wouldn't even think of. (if it ain't clever, it's just a slasher, like Halloween mentioned above)
My favorite series for this is Final Destination, especially part 2, where you think you see how someone will die, but then some rube goldberg series of events causes them to die a totally different way than expected.

SAW has a lot of creative kill methods, and like I was saying, the thru story that arcs through the series, revealing more details and history of the story as it goes along.
