It looked like a happy Chanukah latke to me, but there was neither an L nor an E. Unfortunately, latkes, though easy and delicious, are most definitely not low-calorie.

...and i'm probably not the person to provide healthy recipes. i made a cake last night and a quick tally of ingredients puts it up over 5700 calories. guess i could cut it into 100 pieces and declare it a health snack!

Valerie, I checked out your recipe, and it looks really yummy. I love cooking things with onion and garlic and olive oil. And I like kale and potatoes. So I'm going to give it a try. I also checked out some of your other recipes that I want to try, especially the oven baked combo with the potatoes and chickpeas. I've never tried tempeh, but the way you fix it sounds delicious. Thanks for the great ideas.

Aw, you are sweet!

I like tempeh best when I freeze it ahead of time and then defrost it right before using it. To defrost it, take off all packaging (there are usually two layers of plastic tightly wrapped around it) and then microwave it for 1-2 minutes.

I figure that the recipes on my website are only interesting to a tiny percentage of people. But they are healthy and usually quick, and I think they are delicious, so there's that.
